INGREDIENTS FOR 4 PEOPLE

- 1 ½ cups polenta (not cooked)

- 4 ecodoses water

- Extra virgin olive oil

- ½ lb of beef

- 1 carrot

- ½ stick of celery

- 1 onion

- 1 ecodose of passata (tomato puree)

- ½ ecodose water

- Extra virgin olive oil

 

PREPARATION

For the polenta

Put the 4 ecodosi of water (4 ¼ cups water) and extra virgin olive oil in a pressure cooker and bring to a boil without covering the pot with a lid. Once the water boils, gradually pour in the polenta and keep stirring.

Close the cooker, and cook for 20 minutes. Lower the heat once you hear the “whistle".

Once cooked, turn off the heat, let the steam escape from the valve, and open the lid. If there is still some water on the surface of the polenta, just stir with a tablespoon or with a whisk.

For the baby stew

Chop the meat into cubes (about half an inch) and put them in the pressure cooker. Add the vegetables (cut into the same size), the ecodose of tomato puree (1 cup) and ½ ecodose of water (1/2 cup).

Season with a dash of extra virgin olive oil and then stir.

Cover the pot with the lid and cook for 20 minutes. Lower the heat once you hear the first “whistle”.

Once cooked, turn off the heat, let the air escape from the valve, and remove the lid. Serve the polenta topped with the stew.
